1lb/500g pork loin - cut into small bite size pieces
1 green bell pepper - cut
1 red pepper - cut
small carrot - sliced
fresh or canned pineapple - sliced
1 clove garlic - chopped
oil for frying
6 tbspn cornflour

sauce ingredient
3 tbspns vinegar
3 tbspns brown sugar
3 tbspns tomato ketchup
1 tsp cornflour
4 tbspn water
salt to taste

1. Marinate pork with 1 tbspn soya sauce, 1 egg yolk & 1 tbspn cornstarch & keep for 1 hour.
2. Heat oil for deep-frying, coat meat with cornflour, shake off excess & deep fry over medium heat for about 3 minutes or until cooked. Remove & drain.
3. Leave about 3 tbpns of oil, lightly brown garlic, add peppers, carrot & stir fry until half cooked through, add sauce ingredients & bring to boil.
4. Mix in pineapple & pork, blend well & dish up to serve.
