Potato Soup

Smoked Ham Shanks placed in large pot. Cook till falling off the bone. Remove from stock and cool shanks to remove meat. Cool stock to remove Fat.

Add 2 medium sized onions,chopped
about 3 or 4 pounds of Red potatoes, Diced.

Cook till veggies are done. Add heavy cream. I'm heavy handed with this so use your own judgement. I also thicken with some flour and water.

Chop and add meat.

Just befor serving I add diced Williams Sharp and Creamy Cheddar Cheese. The cheese stays in little nuggets that melt in your mouth. Very hearty soup and good with a slice or two of crusty bread. Also good to put over Pasties. Had a hard time parting with this recipe. It's one of my specialties.

That sound very good Sue. Low calorie too, right? LOL

Our potatoes soup was always made simpler and thinner, using just milk, water, potato, and onion when growing up. Haven't made it for a long time, so i'll try your recipe. Bet i like it.

That doesn't sound like any potatoe soup I've ever had. I usually consider potatoe soup to be kind of bland but this sounds great, even if it doesn't have any mushrooms:wink: Thanks for sharing.

I have often added leftover ham to my potato soup and it is great!!

Hey Sue..... just leave out the potatoes and you have the start of some good Wisconsin chees soup. LOL

Sue do you know my mom, LOL. Your soup is just like hers except one ingredent, she also makes up some rivils ( well beaten eggs mixed with flour to form little dough balls) and adds them to the soup also
