Potato Soup
Smoked Ham Shanks placed in large pot. Cook till falling off the bone. Remove from stock and cool shanks to remove meat. Cool stock to remove Fat.
Add 2 medium sized onions,chopped
about 3 or 4 pounds of Red potatoes, Diced.
Cook till veggies are done. Add heavy cream. I'm heavy handed with this so use your own judgement. I also thicken with some flour and water.
Chop and add meat.
Just befor serving I add diced Williams Sharp and Creamy Cheddar Cheese. The cheese stays in little nuggets that melt in your mouth. Very hearty soup and good with a slice or two of crusty bread. Also good to put over Pasties. Had a hard time parting with this recipe. It's one of my specialties.
