9 medium peeled potatoes
7 slices bacon
3/4 cup diced onion
2 Tbsp flour
2 Tbsp sugar
2 tsp salt
1/2 tsp dried celery leaves
1/2 tsp white pepper
3/4 tsp dried pimento flakes(rehydrated)
3/4 cup water
1/2 cup water

place peeled potatoes in medium sized sauce pot, cover with water and boil until tender.Drain and set aside to cool slightly, then slice thin, return to pot.
In a frying pan, fry bacon until tender but cooked, remove bacon from pan and drain, then crumble, reserve grease.
Add onion to the bacon grease and saute until golden brown, mix in flour,sugar,salt,celery leaf, pimento flakes and pepper, until mixture bubbles,stir in vinegar and water, until thin sauce is formed, if not thin, add 1 Tbsp vinegar to 3 Tbsps water until sauce thins.
Pour over potatoes in pot and stir gently over low heat, until thouroughly warmed.mike

Thanks for your recipe, miker! I should have asked you for this in December...with Mom being out of it, the family was in a panic about our traditional German Potato Salad on Christmas Eve, as Mom always makes it. I'm her official taste-tester, and was able to calm my sister in laws down by coming up with a version that was close to Mom's.

Will definitely try this one!! Thanks!!
