4 cups of low sodium V8 (or spicy or regular) Chiled
1/2 cup finely minced onion
1 medium garlic clove minced
1 medium bell pepper minced
1 tsp honey (optional)
1 medium cuke, peeled,seeded and minced
2 scallions minced
juice of 1/2 lemon + 1 lime
2 T wine vinegar
fresh herbs (we used tarragon,basil,mint,oregano) about 1-2 T of each.(or a t of each dried) ......cilantro is also very common in gazpacho
1/4 to 1/2 t of cumin
1/4 cup freshly minced parsley
2-3 T of olive oil
salt, pepper, cayenne to taste
2 cups of fresh tomatoes diced

Combine all ingredients......and then puree 1/2 in food processor

Chill till very cold

AAAAAHHHHH.........one of my Favorites!! Thanx for the posting Stever! (the kids like it warmed slightly...but whatever it takes to get them to eat their vege's).

Sounds great, I love gazpacho. I have yet to find the perfect one. I cant wait for Michigan garden grown tomatoes.
