Pineapple Upside Down Cake
2 eggs
2/3 cup white sugar 1 large pineapple slices (drain and reserve 6 tablespoons of the juice) 1 teaspoon vanilla 1/3 teaspoon baking powder 1/4 teaspoon salt 1 cup flour 1/3 cup butter 1/2 cup brown sugar marashino cherries walnut halves if desired (A heavy cast iron skillet is preferred to use for baking this.) Melt butter in pan on stovetop. Sprinkle evenly with brown sugar, mix and spread evenly in pan. Arrange pineapple slices, cherries and walnut halves. In separate bowl, beat eggs 5 minutes until thick. Gradually beat in all granulated sugar. All at once add 6 tablespoons pineapple juice and vanilla. Add flour, baking powder and salt, mix well. Pour over arranged fruit in cast iron pan. Bake at 350 for 30 minutes. Immediately place heavy plate on top of cake (upside down please) and turn the cake pan and plate over. Allow to sit several minutes before removing pan from plate. Serve warm or cool. Pour mixture
