Roasted Tri-Tip with Ramps....YUM!!
I rarely measure or time, so that parts a "wing it".
2-3lbs Beef Tri Tip roast Couple Tbs Olive oil As many ramps as you like onion garlic your favorite mushrooms salt and pepper paprika Italian spices combine and coat spices on meat, then toss on the onion, garlic and ramps. I save the mushrooms until about half way in and I cook for 1.5-2 hours on 320 or lower and slower. Baste with juices. We have Potatoes w/ramps as well and already have some pork ribs marinating in some red wine w/ramps for the smoker tomorrow. Now I just got to find some Morels to go with it, been striking out so far, but the rain came! I will be having french dips with the left overs tomorrow! Enjoy! |
