One time I canned some tiny chickens that were still in the nubbin' stage. I had a great recipe and if I can find it again I will post it. I think it was by the Foraging Chef and the last time I tried the link it was gone.

I love to take the white pored chicken which I call Cincinnati Chicken and sauté it in butter. I love the delicate floral scent. The yellow pore is great cooked in butter and smothered in hot sauce. It makes a mushroomy hot chicken wing like dish.

I try to pick the chickens before or just after they start to fan out other wise they are tough. If there are a lot of chickens on a stump and they are getting big I cut off the juicy edges.

This year I have had trouble with worms. I cut a nice nubbin stage off a tree and it was rotten at the base from the worm infestation.

I'm thinking of par boiling any that I find today and then dunking in ice water to stop the cooking and then skimming off the maggots. That is if the mushroom looks to be in otherwise excellent shape, no browning etc.
