Pheasant Backs

I was in my local woods and found these Pheasant Backs. Cool and told good to eat.

mainly with pheasant backs you want to take just the outer edges, or when they are very young take the buttons. they smell like cucumber/watermelon.

Yeah, get them when they are small and young. About the same diameter as a pop or soup can. And as Blake said if a little bigger, just use the edges cut off easily with a knife. If you have to use much pressure, you are cutting too deep.
