Eggplant Caviar

* 2 medium eggplants
* 1 cup water
* 1 cup canned crushed tomatoes
* 1 tablespoon tomato paste
* 1 clove garlic, crushed
* 1 teaspoon lemon juice
* 1 teaspoon Balsamic vinegar
* 1/4 cup olive oil
* 1 tablespoon capers
* A few drops hot pepper sauce
* 1 tablespoon minced onion
* 1 teaspoon sugar

Peel and slice eggplants.

Cook in 1 cup water until tender. Drain and mash.

Add remaining ingredients.

Chill several hours or overnight.

Serve as spread for bread or crackers.

Makes 2-1/3 cups.

Dairy-Free, Gluten-Free, Vegan

* 1 large eggplant, pricked
* 1 onion, chopped finely
* 1 green or red bell pepper, chopped finely
* 1 large tomato, chopped finely
* 1 tsp salt
* 1/2 tsp pepper
* 1/4 cup olive oil
* 1/4 cup vinegar (or lemon juice)

Bake eggplant at 350F for 40 minutes. Cool, take out pulp and discard the skin. Add remaining ingredients and chop very fine. Add salt and pepper to taste.

Per Serving (363g-wt.): 250 calories (170 from fat), 19g total fat, 2.5g saturated fat, 3g protein, 21g total carbohydrate (2g dietary fiber, 6g sugar), 0mg cholesterol, 780mg sodium

I tried both out on our "Tiger" crew last night and there wasn't any left..The bowls were so clean I almost(almost) just put them in the clean dish section. Ty you again, tonight I went a lil crazy with the heat(scotch bonnets and habaneros) in honor of our 100mph+ pitchers Go Tigers! P.S Do eggplants keep well? My Sister's neighbor I gave some shrooms to offered me about a bushel basket if I want Or maybe can I make up a big batch an freeze it?
