Shrimp in Lobster Sauce

Shrimp in Lobster Sauce

½ Lb. lean pork, diced. (I use smoked chops)
1 T. fine chopped carrot
1 T. minced celery
2 t. salt
dash pepper
¼ C. oil
1 clove garlic, peeled
1 C. bouillon
2 Lbs. Raw shrimp (I use already cooked, peeled & deveined)
¼ C. water
2 T. cornstarch
1 egg, slightly beaten
2 T. diced green onions
3-4 C. hot cooked rice

Mix together, pork, carrot, celery, salt & pepper. Heat oil in a large skillet over medium heat. Add garlic, cook 3 minutes and remove. Add and stir pork mix and bouillon into oil. Cover and cook 3 minutes. Add shrimp. Cover and cook 7 minutes. Reduce heat. Combine water with cornstarch and mix well. Stir into mixture and cook and stir until sauce thickens. Slowly add egg. Serve over rice.
Garnish with sliced green onions.
