Oven fried fish & Tartar sauce

OVEN FRIED FISH WITH TARTAR SAUCE RECIPE

1 pound fish filets, trim larger fish like walleye into 1/4-3/8 inch thick pieces or panfish filets (I prefer no skin, also RAW-completely peeled and deviened shrimp works too)
2 TBSP butter (may or may not need it all)
1/2 TBSP dill (or your favorite fish spices here)
1 small clove garlic finely chopped or pressed
1 & 1/2 cups bread crumbs plain or seasoned
2 cups milk
A lightly greased large thick glass baking casserole type dish

Preheat oven to 500 degrees.
Get butter melting and add the dill and the clove of garlic chopped finely or run through a press.
Put bread crumbs in a Ziplock bag.
Put fish in the milk, drain off excess.
Place fish into bag and close, coat evenly.
(This is optional, unzip the bag and place on the counter and press the crumbs into the fish a little careful not to smash the meat).
Lay fish pieces in the pan so they are not touching each other.
Dribble a little of the melted butter with the dill and garlic (or favorite spices) in it onto each piece, some will roll off just make sure each piece gets some on it, careful not to over do the butter.
Place in preheated oven center rack for 10-12 minutes.
It may start to smoke, if so it is probably done or very close.
Remove from dish quickly or it continues to cook a few minutes. TURN OFF THAT OVEN, IT'S HOT!

Serve with tartar (recipe below) and a side of taters or noodles or rice or veggies.

Tartar sauce

About 1 cup mayo
Squeeze in about 1 TBSP of fresh lemon
a little mustard
about 3 or 4 TBSP of DILL pickle relish (not sweet)
Mix well and chill several hours before serving
