Flavored Oil & Flavored Vinegar Recipes

Flavored Oil

To make a chile pepper oil, prick several chile peppers with a fork to release flavors. Place black peppercorns, basil, and chile peppers in lidded glass container. Pour good-quality oil of your choice, up to the top of jar and seal tightly. Place bottle in sunny window for 2 weeks to mature. Shake bottle everyday. Strain oil, then pour into clean bottle. Add fresh chiles and reseal.


Flavored Vinegar

To make herb vinegar, place fresh herbs and peeled onions in mortar and lightly crush with pestle. Or crush with the flat side of a large knife on cutting board. Place crushed ingredients in clean wide-mouth jar. Slowly heat about 16 oz. of white or cider vinegar, in enamel or glass pot until warm. Pour into glass jar over herbs and onions, filling vinegar to the top. Tightly seal and place jar in a sunny window for 2 weeks. Shaking daily and taste periodically. If desired, add more spices and allow to sit longer. When vinegar has reached itís desired taste, filter through, straining cloth. Pour flavored vinegar carefully into cleaned decorated bottles. Add fresh spices and herbs for decoration and flavor. Seal bottle.

We make our own Garlic oil...used in thai and chinese cooking...got the tip from a friend of Jeff's that is thai...Jeff says it's the 'smell' of an authentic restaurant.

Place quality oil in saucepan; add chopped fresh garlic (I use a pint of oil and one whole clove of garlic). Slowly heat oil until the garlic starts to turn light brown, turn off heat, and allow to cool.

I keep mine in a pint mason jar close to the stove, and we use it all the time. Definitely adds a good flavor!
