Coconut Shrimp Scampi Stir-fry

This is a recipe I just threw together one day and it’s now one of our favorites.

1-2 Lbs. Frozen Peeled and Deveined Shrimp. Thaw, under cold water, Remove Tails.
2 Lbs. Frozen Stir-Fry Vegetables. Semi thaw.
1 stick butter
1 T. garlic powder
1 can 13.5 oz. coconut milk
1 t. sugar
3-4 T. cornstarch
1 T. parsley flakes
2 T. dehydrated morel powder
1 T. curry powder

In a large wok or skillet, add butter and garlic powder, melt over medium heat. All at once add shrimp and vegetables, mix gently. Cook on medium-high heat for 5 minutes. In a bowl, mix coconut milk, sugar and cornstarch. Mix well. Blend in morels, parsley and curry. Pour over shrimp and vegetables and gently mix. Bring to just boiling, to thicken the sauce.
Serve over jasmine rice.
