Pickled Wild Leeks

2 cups vinegar
6 cups water
2 cups sugar ( more or less to taste )
3 Tbs salt ( Sea salt cause it's better for you )
3 Tbls. or more pickling spices
Little bit of Alum
Bring to a boil and cook for a little while, then cool
Add your leeks and let set at least a few days ( the longer the better )

This is great for Hen Of The Woods & Chantharellus sp. too. Just saute them lightly first. Jack
