Fun video! We like the video hunts that people post. They are fun and helpful. We've found the chants are picking up steam... found almost a pound of black trumpets today.. We would be very interested to know how the chant vodka turns out! We do tinctures with reishi and chaga.

Mike, the Chanterelle vodka has been soaking for 6 days. I tried it this morning and it is Fantastic. I'm so impressed I'm going to make some more. I also Sweet Piskled some Chanterelles which are great too. I see some Chanterelle Martinis in the near future.

We are going to have to try that chant vodka it looks and sounds great! Is the recipe for the sweet pickled chants on here? If it's not... is it a recipe you would be willing to share? For what it's worth... we were told by a man who runs a liquor store and likes his vodka that you can buy cheap vodka and run it through your brita filter a couple/three times and it's as good as the expensive stuff. His reasoning was that the difference was the number of times filtered. It seems like there would be more to it than just that... but.... fyi. We haven't tried it yet but we are planning on it. Throwing in a picture of our Saturday hunt.... it's a 16 inch pizza pan.. just shy of 1lb of black trumpets. It was a fun day to be in the woods. Happy hunting!

The Sweet Pickle Brine……..1 cup Vinegar, 3 cups water, 2 ( yes 2 ) cups Sugar, 1 & 1/2 Tablespoons Sea Salt, 2 or more Tablespoons Pickling Spices, 1/4 to 1/2 Teaspoon Alum. Heat to a boil, add the Chanterelles and turn heat off. Let it all cool and spoon Chanterelles loosely into jars and add the Brine. I refrigerate them for up to a couple of months…..if they last that long. ( the next batch I may add cinnamon or nutmeg, or both. The Vodka's easy , just add chanterelles to a jar of GOOD Vodka, not some cheap stuff. Let it set for a few weeks . Then strain and bottle up with your own label ! Note: I tried the Chanterelle Vodka after just 6 days and it's perfect. So perfect in fact, I made another quart......


and thank you Jen for the compliment, a lot of people don't get it cause they never saw The Walking Dead.

Hi Jack, Mrs here...thanks so much for sharing the recipes. Keeping our fingers crossed we find more so we can try them both out. I have a question or two, if you don't mind. Does brining, or soaking in vodka, cause the mushrooms to be able to be eaten without cooking? Seems like it must, but just want to be sure of it...they sure do look pretty in those jars, either way. Any tricks in the preparation? What vodka do you recommend? Thanks, as always, for all your help.
