Last fall I was inteduced to stumpers. My wife liked them better than morels (I did not). Can anyone tell me when they should be picked? At their button phase or closer to when the start opening.

I like the small ones better. The stumper (honey mushroom) is a good one for canning. However, one must be careful when gathering the stumper, as there is a deadly look-a-like. You should acquaint yourself with the Gallerina autumnus, before picking stumpers. The deadly one can grow right near the edible.

I agree w/Happy Trails.

I found bags and bags of honeys last year and ended up pitching most of the 'mature' specimens.

The younger the better.
