I need help with hens please

I have hunted morels for the past 25 years but that is it and I have been doing research on hens but I have not found out if there are any other polypores out there that I need to watch out for that look like hens. Is there anything I need to watch out for? Is there anything that is comparable in taste? Thanks in advance

You will need to watch out for an increasing number of other people out hunting them! I like them as well as Morels and they are easier to find most years.

Sometimes they can be harder to clean and tough if too mature.

I believe that the hoards of morel hunters will eventually become the hoards of Hen hunters.

For most people it's difficult to confuse Hens with anything poisonous. Grifola umbellata, which I have not found, is similiar in appearance and edible. Black staining polypore might be confused with a Hen.

Hens can vary in color.

So basically what I got out of what you wrote is just to make sure I know how to identify the hens and I will be just fine then right? So is there anything that hens taste like at all? I had some dryad saddle this year and they were pretty tasty so I am slowly working my way to each different thing out there and getting the hang of it and then moving on to another one. I figure this will help me when the morels are not doing so well lol.......and it will help me find new places to deer hunt

I think Hens taste like deep fried pork chops but my wife says they take like morels.

I choose to pick them because I never worry about mistaking them for anything poisonous.

Thanks for the help. They sound like they can be pretty darn good . I found so many young dryad saddle around my area that I could of fed an army so I hope I will have the same luck with the hens too!

Hens are pretty safe to hunt Ranger. As for what they taste like all by themselves, I couldn't say. It's been so long since I ate "just Hens" sauteed up. I love them in all kind of meals though. My favorite is to pair them with pork.
But they will go great with fowl and beef too.

Whether using a duxelle rubbed over a roast, or injecting, or just tossing a few fronds in the bottom of the pan while roasting. They're great! They do add a lot of good flavor to your meal.

Plus they are good for you health wise.

Hens are more of a meaty taste to me than anything. The only thing I constantly see people confusing with a hen is Black-staining polypore, but there are others that I suppose one might confuse with a hen if they really had no clue what a hen looked like, Cauliflower and Umbrella polypore come to mind.

But, according to the experts, there are no poisonous look-a-likes to the hen of the woods mushroom, only ones that might taste like dirt or stale cardboard. LOL!

While I'm thinking of it, Grifola umbellata will be coming out in June. I've found it 3 times and I like them much better then G. frondosa. They are tenderer, but you have to find them as quick as they fruit cause they get wormy real quick.

Sweet pics. Thanks, that helps a bit more because all the pics that I found were not close enough for my tastes.

One more question for you guys, is there anything that I need to do in order to prepare them such as cutting off the stem or hard spots like the ddryad saddle?
