Canterelle Infused Vodka
After about 10 days, it's done. One Quart of Vodka, 1 Apricot halved, a little Nutmeg and Cloves. To me it's well worth making.

Chanterelle Jam
2 Cups Finely chopped Chanterelles. Fill the 2 cup container with the Chanterelles, to the top with water. Add 1 Tablespoon Lemon Juice. Add a little less then 1/8 th Teaspoon of Nutmeg Add 1/8 th Teaspoon of Cinnamon Put in a Blender or Food Processor on Liquefy Bring to a Hard Boil. Add Sugar ( 4 cups ) and bring back to a Hard Boil Add 2 packet Certo Liquid Fruit Pectin Bring back to a Hard Boil for 1 minute, then pour into 1/2 pint jars and seal. I didn’t pressure cook or Hot Pack them so you may want to freeze them to extend the shelf life. Don’t forget to leave headroom if you do freeze them.

I can't imagine what the jam is like. My first reaction was yuck! But who knows.... I don't find chanterelles to have any flavor to begin with I just eat them for the health benefits . I wish I would have read this post awhile back. Not that I've found enough chants to do anything with but now I'm thinking of trying this with other mushrooms.
