Pollo Penne con Vodka

Here is a recipe I picked up in 1992 when I visited my cousin in Napoli, Italy.


1 lb. penne
1 14 1/2 oz. can diced Tomatoes
3/4 stick butter
1/2 cup grated parmesan cheese
1/2 cup grated ramano cheese
2 sprigs fresh parsley or 1 tsp dried parsley
2 cups of heavy or whipping cream
3-4 dried hot red peppers
1 lb Chicken Breasts
1/2 cup vodka

Cut chicken into one-inch cubes. Heat in skillet over medium-high until brown and cooked through. Drian chicken and place in a bowl. Add the vodka to chicken and set aside.
Heat butter and tomatoes in a small sauce pan until boiling, add red pepper and simmer for 20 mins stirring occasionally.
Meanwhile cook penne in plenty of boiling water until al dente.
After 20 minutes of simmering remove from heat and add the cream and both cheeses. Stir until smooth. Toss pasta, sauce, chicken and vodka in a large bowl until thoroughly mixed. Chop parsley if fresh and sprinkle over the top.

Sounds like an interesting recipe. Can you taste the vodka? I'll definately try this one. Thank you!!

Yes, you can taste the vodka a little largely because of the aroma. Sometimes I make it with 1/2 cup of vodka to make it stand out a little more.
